It might not sound all that impressive but this sandwich is amazing. I made it for dinner on Sunday and served it with some sweet potato chips. Surprisingly enough, it was one of the nicest things I have had in ages and it really isn’t difficult.
- Chicken breast
- Cajun spice
- Cucumber, tomato and salad leaves
- Tsp mayonaise
- Tsp natural yoghurt
- Bread slices
Cover the chicken in the cajun spice and cook either in a griddle pan or in the oven. Mix the mayo and natural yoghurt together. Once the chicken is cooked, cut into slices. Place in the bread along with the salad, a squirt of kethup and the mayo/yoghurt mix. Enjoy!
